These are pistachios that have not opened naturally (on average 20% of the crop varying by variety and crop year). Closed shell pistachios go for further processing, i.e. shelling, to produce natural kernels or are mechanically opened. On average, 15,000 tons of closed shell pistachios are exported from Iran each year, with an estimated total value of over USD 100 million. The main market for this product is the Far East.
